Sie nahm an drei Olympischen Spielen im Einzel teil. Das beste Abschneiden gelang ihr bei Olympia 1992 in Barcelona, als sie im Viertelfinale der topgesetzten Steffi Graf unterlag. Im Doppel trat sie bei den Olympischen Spielen 1996 in Atlanta an und erreichte das Achtelfinale.
Von 1989 bis 1999 spielte Sabine Appelmans für Belgien im Federation Cup. Ihre persönliche Bilanz steht bei 25:13 Siegen im Einzel und 7:9 im Doppel.
1990 und 1991 wurde Appelmans zu Belgiens Sportlerin des Jahres gewählt.
1997 heiratete sie Serge Haubourdin.
